GETTING THE MEASURE OF THINGS
Since many Canadians have American measuring cups and spoons in their kitchens, these recipes use the imperial system as a practical way to measure out liquids (cups), and spoonfuls (tablespoons & teaspoons).
Our amateur and professional bread panelists agree on measuring flour and grains by weight.
For these listed ingredients, the recipes use the metric system, giving weight in grams (g).
Temperature is given in degrees Farenheit (°F), for Canadian or American ovens. All recipes were tested and perfected at sea level, in a coastal city. You may need to make adjustments if you are baking at a different altitude, or in an arid climate.
